Summer Squash Pizza

I forgot to tell you about something important earlier.  While working super duper early this morning, the girls I work with told me about the Godiva Chocolate of the Month Club.  They told me that it was totally free to sign up, and for signing up I would get one piece of free Godiva chocolate each month.  Why had I never heard of this before!?  After work I immediately went across the mall hallway to sign up for this amazing club.  Today, I got an almond butter truffle and gave it to Brian because he drove me to work at 4:45 this morning 🙂  It was the least I could do.

We then went to the store to exchange my jeggings…and they are beautiful as ever!  After running those errands Brian and I headed home with hungry tummies.  I wanted something quick and nutritious (like every other night!).  We had some summer squash in the fridge, mozzarella, and pasta sauce.  Squash Pizza Medallions were created.

Squash Pizza Medallions


  • 1-2 summer squash or zucchini
  • garlic salt to taste
  • oregano to taste
  • 1/2 cup pasta sauce
  • 1/8 cup reduced fat cheddar cheese
  • 1/2 cup mozzarella
First, preheat the oven to 400 degrees.  Then, slice the squash into round slices about a quarter to half inch thick.  Then place on greased baking sheet and sprinkle with garlic salt and oregano.  Top with pasta sauce and cheeses.  Place in the oven and bake for 10 minutes or until squash is tender and cheese is melted.  Serve along side a salad, chicken breast, pasta, or as an appetizer.

After dinner, I then got busy in the kitchen making the date bars for the winner of the giveaway that I had last Friday.  I know that I included the recipe on the blog before, but I finally have my new camera up and running and wanted to do a little step by step tutorial 🙂
Date Bars (adapted from

Date Filling

  • 3 Cups of Pitted Dates
  • 1 Cup of Water
  • 1 tsp of Vanilla Extract
  • 2 Cups of Rolled Oats
  • 1 Cup of All Purpose Flour
  • 3/4 Cup Brown Sugar
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/4 tsp Cinnamon
  • 1 Cup Margarine
Preheat oven to 350 and spray nonstick cooking spray into the bottom of a 9×9 or 8×11 inch pan.
Date Filling Directions:
Place dates and water in a medium saucepan over low heat until most of the water is absorbed, around 10 min. Stir occasionally.
 Remove from heat and add vanilla.  Cool to room temp and puree until smooth in food processor.  Set aside.
Oatmeal Crust Directions:
In bowl of food processor pace oats, flour, sugar, soda, salt, and cinnamon.  Pulse until combined.
Then cut margarine in smaller pieces and put into food processor.  Pulse until the dough is crumbly-looking.
Take 2/3 of dough and press into the bottom of your pan.
Then top the dough with the date filling.  Spread evenly so that all of the dough is covered.  Take the remaining dough and spread it the best that you can on top of the date bars.
Bake for 30-40 minutes or until golden brown.  Cool completely before cutting into 20 squares.  Store in a sealed container in the refrigerator.

I am honestly loving my new camera.  It is a Sony Cybershot DSC-W530.  I know I have only been using it for a day, but already I am noticing how much easier it is to take steady shots on the first try.

Brian has been studying all evening, and as a little study break he asked me to go on a bike ride.  We went 5 miles, got to watch the sun set, and enjoy a beautiful night.  A perfect way to end the evening 😉

  1. Looks delish! I must say – I think I eat a “pizza” every night though…vegetables, chicken, rice or whatever – all covered in spaghetti sauce/salsa and cheese…EVERY night. Is that bad? Probably…
