Bachelorette Party and Weekend Recap!

Yesterday, we celebrated Erin’s upcoming wedding with her bachelorette party.  The day was FULL of activities and I felt so special to be included in all of it!

We started the day bright and early heading out to the lake where we rented a boat.  With a slide on the back!  We literally spent the entire day in the sun…it was glorious!

We then showered and got ready as fast as we could so that we could get back in time for dinner, presents, and the CHICKEN LIMO!

We tried to all fit in the lovely chicken limo…but unfortunately it literally started dragging and squeeking on the bottom…so we had to have the limo driver take two trips…oops!

It was a great day and night, everything was perfect and memorable!

Today

Yesterday was my Dad’s birthday.  He spent the day in Fort Wayne celebrating with mom, but this morning, my sister and I took him out for breakfast at a little restaurant called Biscuits.

This restaurant is a little hole in the wall place that serves breakfast and Mexican all day.  Two random things to put together?  Not at this joint!  And their specialty?  Biscuits and gravy of course! It is located between 5 and 10 minutes from where I went to college, and I remember many a hung over morning heading to this eatery for some delicious biscuits and gravy.

Even though the memories from the past are from those glorious morning after moments, my sister and I agreed that the food served seemed like the perfect “Dad” food.

I enjoyed an egg white omelette with veggies…honestly, I was kind of surprised that they could do egg whites!  It was pretty tasty 😉

It was great to see Dad and my sister Brenna this morning, what a great way to start the day!

Body Pump

Today marked a pretty big milestone in my group fitness and Les Mills career…I taught my very first Body Pump class completely solo.  That’s right, no video taping, no other instructors around…just me.

Did I make a couple of mistakes….yes, but did I keep going, have fun, and finish on time…YES!  It was a great feeling.  The band-aid has been ripped off, and now I can’t wait to do it again.

Sunday Errands

After Body Pump, I drove to the grocery store and on the way I snacked on a Lemon Zest Luna Bar….so yummy!

I love little bars like this because I wasn’t starving because I had only eaten breakfast a couple of hours before, but I knew that I needed to eat something so that I didn’t want to buy everything at the grocery store.  They are so small and easy to throw in your bag and have on hand all the time…it’s my “emergency food.”

I headed to the store, filled up my cart with lots of goodies, then headed back to the house to fix up my meals and snacks for the week.

I love that on Sundays I “have” to do the things that I love….shop and cook!

Now, I’m off to prepare a workout for a class that I am teaching tomorrow morning featuring…

I hope you all had an amazing weekend, and are getting ready to start the work week off on the right food tomorrow!

Milkshake for Breakfast??

Breakfast tasted like dessert this morning.

I woke up, not really craving anything in particular.  I headed over to the fridge and just started pulling things out that looked good, and I ended up making this DELICIOUS treat! Seriously, it tastes like a milk shake!

Almond Cacao Milkshake Smoothie

  • 2/3 frozen banana
  • 1 Tbsp almond butter
  • 1 tsp raw organic cacao
  • 1 cup unsweetened vanilla Almond Breeze
  • 1/4 cup nonfat plain Greek Yogurt
  • 1 packet stevia
  • 1 tsp vanilla extract
  • ice cubes to thicken things up

Combine all things in the blender and enjoy!  Seriously… 😉

 

 

 

 

The Bachelorette…Party

Today, I am headed to the lake and then out on the town for the night celebrating my friend Erin’s bachelorette party!

Because I love to pitch in when it comes to making food, I made a little Greek yogurt and spinach dip.  Again seriously addicting and delicious, I hope you enjoy!

Greek Yogurt Feta Spinach Dip

Ingredients

  • 2 tsp olive oil
  • 1/4 cup red onion
  • 1 tsp minced garlic
  • 4 green onions
  • 10 oz spinach
  • dash of salt
  • 2 Tablespoons of lemon juice
  • 1 cup of nonfat plain Greek yogurt
  • 1/4 cup of reduced fat feta
  • 1 tsp of dried dill
  • black pepper to taste

 

Directions

In a large skillet, heat the olive oil over medium heat.  Cook the onion, and garlic for about 2 minutes until soft.  Then, add in the spinach.  Continue to gently stir until the spinach is completely wilted down.

When the spinach is wilted, scoop it with a slotted spoon into a food processor.  Pulse about 5 times.  Next, add in the rest of the ingredients except the black pepper. Pulse until desired consistency.

Stir in the black pepper to taste.  This dip can be served cool, or warm!  Enjoy!

Calories:  32.9  Fat: 1.5g  Carbs:  2g  Protein:  3.4g

Oh What a Day (and Night)

Yesterday was seriously packed with so much fun!

After running my first half marathon distance yesterday, Mom and I headed to the grocery store.  I know that some people really view grocery shopping as a chore and try to avoid it at all costs, but to me it is just therapeutic!  Mom and I get to chit-chat and just hang out 🙂  In high school, I always went to the grocery store with mom and when I would come home during college that would be the one thing I would always look forward to…so yesterday wasn’t any different.

We came home from the grocery store ready for a light lunch.  Mom had just bought a ton of tomatoes from an Amish farmer’s market, so I just HAD to try one!

My favorite thing for lunch…veggie tasting plate 🙂 I wanted it to be super light because I had a large snack after running, Mom and I were going to Sam’s Club (and we both love samples and can’t say no to anything free), and we were hitting up the Taste of the Arts.  Long story short, we needed to save room!

We then headed to the bridal shop to get my bridesmaid dress for Chelsea’s wedding!  I honestly think that I have the weirdest body shape.  The dress fit slightly loose in the chest and hips region, but had to be let out in the middle region…I just do NOT have that hour glass figure everyone longs for…I guess you could say I am either “boy-shaped” or a “ruler.” (at least that is what the magazines label my body type!)

At the wedding shop I tried on my first wedding dresses!! Mom and I were there surrounded by beautiful gowns…how could we not take advantage of the situation???  My favorite was the very first one that I tried on, but I also tried on a Kate Middleton replica just for fun!  That thing was heavy!!!  It was super pretty, but I am just not a fan of the sleeves.

We then went to Sam’s Club to get my new camera!!  I haven’t used it yet because it is charging right now.  I am hoping for the best!

After Sam’s it was time for Taste of the Arts.  Mom and I had never heard of this event in  Fort Wayne before so we were really excited to check it out since our family really supports the arts, and loves to try new food!  After talking to some of the people working at the booths we actually found out that this event had been going on for 10 years!! I couldn’t believe that I had never heard of it, but it was seriously so great.

Mom and I shared everything so that we could try more stuff without feeling too full.  I was really glad that I had run 13 miles earlier because that literally made my stomach feel like a bottomless pit…literally I wasn’t full all day.

We started off with a Tropical Smoothie from Smoothie King.  I have seen Smoothie King’s before, but I had never tried it.  It was so tasty and the perfect way to start our little sampler platter in the afternoon heat.

We then headed to the Biaggi’s table to try the caprese salad….I think this was my favorite dish of all!

The next stop was for a chocoholic ice cream sundae…chocolate ice cream, oreo crumbs, m&ms, and chocolate sauce…so good!

Next stop was at another little restaurant  that I can’t remember the name of to try a tuna nacho.  It had raw tuna, veggies, and wasabi sauce.   So yummy!

We then walked around the little art booths to see what was going on.

We then headed to Chelsea’s bridal shower.  Her new house is so amazing, and it was so great to see old friends!  We then realized that so many of our friends are engaged…this is me, Chelsea, and Katie (another high school friend).

After the shower, I had to head home to get all dressed up for our night out for the bachelorette party…needless to say, it was a blast!!!

This Morning

So, because last night was so fun I was feeling a little under-the-weather this morning.  But after my mom made me a yummy breakfast I felt tons better…and some water and excedrine 😉

Training Isn’t Always Pretty

I woke up today ready to run!

I started out with an overnight bowl of oatmeal with peanut butter to give me fuel for my final long run of training.

My mom is part of a walking group, and today they were walking 6 miles so I went with them to see what I could do.  Originally, I thought that I was going to do the 6 mile loupe twice and possibly walk the last mile since 11 miles was on the schedule for the day.  I ended up finding a group of runners that were doing the half marathon loupe so I joined up with them!

I started off running right behind another girl that seemed to have a pace pretty similar to mine.  After about 3 miles I lost her and was on my own.  There was a group of three people a ways in front of me that I had been following for the entire run as well.  Although the trail was marked, I still didn’t really know where I was going so I told myself to stay behind them the entire time.  After getting to about mile 8, I caught right up to them!!  My pace was under 10 minutes the entire time, which is faster than usual for me on these long runs 🙂  When I caught up to them, they realized they didn’t know where they were going and I didn’t know where I was going either, so we stuck together in order to figure it out.

Throughout my training for the half marathon I have been doing my long runs (well all of my runs for that matter) by myself just listening to my iPod.  Once I started running with them, I turned off the iPod and I was surprised by the fact that I was able to carry on a conversation after running nearly 10 miles!  It was great to have company, especially experienced company that pushed my pace a bit.  After talking for a while, we realized that I went to high school with the son of one of the men and he is dating one of my best friend’s from high school’s younger sister….small world!!

I opted not to walk the last 1 or 2 miles because I was feeling so great.  Colin (one of my new friends) and I sped up a little bit faster than Len and Tiffany (the other two running friends) and finished with ease.

I then stretched out, and made sure to do a good job of it because jumping from 10 miles to 13 miles is a big leap, but I know I will be in good shape for the race next Saturday.  Good news though…no chafing!  Thank you Body Glide!

Training isn’t always Pretty

I felt pretty good afterwards and came right home to shower.  After showering I started blow drying my hair, and then suddenly I just did NOT feel good.  I didn’t eat right afterwards because my stomach felt a little strange and I didn’t want to upset it, but I think that was a bad idea.  I made myself a little glass of chocolate milk to replenish my body with blood sugar and protein, but that just didn’t quite do the trick.  I layed down on the couch to just close my eyes and try to  cool down.  I think the blow dryer overheated me.

My mom then gave me raisins, peanuts, and chocolate chips along with a fresh glass of ice water…just what the doctor ordered!!

It’s true, training isn’t always pretty…but I guess chocolate just makes everything better 😉

Now, mom and I are off to the grocery, picking up my brides maid dress (!!), hopefully replacing my camera, hitting up Taste of the Arts in downtown Fort Wayne, Chelsea’s open house, then Chelsea’s bachelorette party!! Should be a fun and busy day 🙂
