It’s Already Thursday?! and Another Easley Recipe

This has been one crazy first full week of work, and I cannot believe that it is almost Friday.  Eek!  Where did the week go?

I started this morning by teaching a full Body Pump class.  My dad came along to video tape it so that I could send it in for an assessment so that I can finally be OFFICIALLY certified.  It was only my second time teaching the full class, and while I made a couple of mistakes with my cueing, the girl who usually teaches the class told me that my coaching was strong, my technique was good, and that EVERYONE makes mistakes…even her, and she has been doing this for 5 years!!  So, I will have to watch the video and evaluate it before I decided if I want to submit it.

Then, it was time to hit the showers and get ready for work.  On my way to work I enjoyed another baked oatmeal.

For some reason, I didn’t think of it until just yesterday to make multiple baked oatmeals at a time.  It truly is a no-brainer idea, but I was literally making a baked oatmeal every single night.  Next week, I am going to make a bunch either in muffin tins or a flat 8×8 pan that I can cut into squares so that I have one less thing to prepare after I get home form work.

I then sat at my desk and started working.  I am enjoying the new job, but it is very hard to stay organized.  I am managing the sales of two different properties that are two different brands with two different systems and a different method of filing things…needless to say even for a person who enjoys being organized, it is confusing!

When noon rolled around, I was very happy for the lunch break.  Last night, I made a little experiment with egg whites, cottage cheese, and spinach.  I didn’t measure anything, but they turned out very tasty, so next time I will be more precise so that I can share!

Today’s lunch included a salad topped with leftover brussels sprouts, roasted sweet potato, bell pepper, tomato, onion, salsa and one of these little egg white muffins.  Yummm…

Tonight, after work I will be hanging out downtown for a bit so that I can teach a 30 minute abs class.  Although it will be a later night, I am looking forward to teaching 🙂

Reggae Blush Strawberry Cake Balls

These treats are truly delicious.  Using wine in the batter actually replaces the fat needed for baking.  By combining applesauce and wine, this treat will have less fat than adding oil and have a unique flavor that you would not taste by using a traditional cake mix with oil and eggs.  A special treat suitable for all ages!

What you Will Need:

Cupcakes:   

  • 1 box strawberry cake mix
  • 3.9 oz box of instant vanilla pudding
  • 3 eggs
  • ¾ cup Easley’s Reggae Blush Wine
  • ½ cup unsweetened organic applesauce
  • 12 oz of white chocolate chips for dipping the cake balls
  • 1 cup Buttercream Frosting (recipe bleow)
  • 24 cupcake liners

 Buttercream Frosting:

  • 1 stick of butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 4 Tbsp milk*

Instructions:

Buttercream Frosting:

In a large mixing bowl, beat the butter for about a minute to soften.  Alternately, add in the dry ingredients and the wet ingredients.

*Only add the milk until the frosting is of the desired consistency.  You may need a little more, or a little less.

Cupcakes:

Preheat the oven to 350 degrees.  Place 24 cupcake liners in a cupcake pan. In a large mixing bowl, combine all ingredients.  Mix at a medium speed for 2-3 minutes until the batter is smooth and thoroughly combined.  With an ice cream scoop, scoop batter evenly into cupcake liners.  Bake in the oven for 18 minutes, or until a clean knife inserted into the center of one of the cupcakes comes out clean.  Allow to cool completely.  Once cooled, remove cupcakes from the liners and smash into crumbs.

 

Place the cake crumbs in a large mixing bowl.  Use 1 cup of icing (or if using store bought icing use 1 full container).  Mix until the cake and frosting are thoroughly combined.

Place in the fridge for 1 hour, or overnight.  Once cooled, remove from the refrigerator and roll into walnut sized balls.

Place the balls back in the refrigerator for 1 hour or overnight.  Melt white chocolate.  Roll each cake ball in the white chocolate and place on waxed paper to harden.

*If making a half batch of cake balls, use 12 cupcakes and freeze the other 12 to thaw and serve for a  quick treat at a later date!

Let the Packing Begin

Yesterday started out bright and early with a 30 minute elliptical warm-up at the gym followed by a strength training workout focusing on my legs.  I must admit that after running 7 miles the day before…my legs were a tad bit tender.  After the workout there was plenty of foam rolling to ease some of that muscle soreness.

I then came home, quickly (very quickly) showered, got ready, and whipped up three egg whites, and apple and a tablespoon of peanut butter.  I forgot how much a really like apple and peanut butter…it seems like ages since I have last had it.

Brian and I then headed out to get my car fixed.  It had been shaking a lot while I was driving it and making this weird popping noise, and the engine light was on so Brian and I decided it was time to take her to the shop.

While my car was at the shop, Brian and hung out with his mom at Einstein’s bagels.  They enjoyed onion bagels with veggie cream cheese while I sipped on an iced coffee.

It was then time to head to the outlet mall.  Brian and I are going to be taking our engagement photos in about two weeks! (I can’t believe it is coming so soon!) and Brian wanted to pick up a couple of new shirts.  I have been wearing the same shoes for running, teaching group fitness, and just about everything under the sun since October so I was in the market for a new pair of group fitness shoes and a separate pair of running shoes.

The pair of shoes that I got for group fitness I really love.  They are the Adidias Fly By W.  According to the information provided online they are very breathable and for a person with a neutral foot position (that’s me!) that wants lightweight cushioning.

I wore them on a walk with Brian last night and thought they felt great!  The pair that I bought for running I have read a lot of mixed reviews about.  They are more for someone who needs a very sturdy/stiff shoe who overpronates.  I don’t fall into that category and don’t want to risk being in pain when I run.  I am going to think about it a bit more, but I may return them.

We then went to pick up my car, which she now works like a charm, and then got back to the apartment to start packing.

It really wasn’t that bad once we finally got started.  Now, I am just ready to get everything boxed up and be done with the whole process.

While Brian and I were unloading the drawers and cabinets in our living room Brian found something…the last Easter egg!

I hid that one 😉  Must have been a pretty good hiding spot if it took us two months to find it!

We then had leftovers from the night before for dinner and headed out to walk around the city.  The weather is so nice and warm, there was no way we couldn’t take advantage of the beautiful night.

Today

Today was another early day for me.  I started by working on another component to my “special project.”  Here is a hint as to what part of this project is.

Buckwheat pancakes for breakfast with a special blueberry sauce.  They were both delicious and tasted great together.

Now, off to teach a spinning class and pack pack pack!

A Little Bit of Everything

Hello!

Today has been a jam packed day for me.   I have been doing a little bit of everything! After getting some things done around the apartment this morning, I headed off to volunteer with a local arts organization.  Today, I basically just got a tour of the facility and introduced myself at their bi-weekly meeting.  Wednesday, I get to head back to the organization to actually get my hands dirty and help them put the finishing touches on a fundraising event coming up.

After volunteering, I came back and changed my clothes so that I could head to the gym and teach a mat pilates class.  At first, I must admit that I was a little nervous.  I haven’t taught pilates in about a month!  But once I started teaching, everything was fine and I didn’t have any hesitations 🙂

I then headed outside to attend the new BodyPump release!  It was a short class with only four tracks because my gym was doing a back to back launch of BodyPump, RPM, CxWorx, and BodyCombat.  I only stuck around for BodyPump, but the music was great, the atmosphere was amazing, and everyone was completely “pumped.”

It was perfect weather to do the workout outside.   The breeze was like a giant fan..

Last year, Brian ran a 6 mile race with me on the 4th of July, and he told me he wanted to do it again!  Today, was Day 1 of his training program.  We did a little boot camp style weight program then went for his first of many jogs.  What a great way to spend time together!

After all of that activity, it was definitely time for dinner.  I quickly baked up some tofu (recipe to come soon!) and steamed some green beans.  Lately, it seems like quick meals are the name of the game for me.

Even though I don’t have a full time job yet, I am still super busy…which I like.  I am constantly substitute teaching fitness classes, meeting with people about future career plans, and applying for jobs.  What can I say, I don’t like a lot of down time.

Sorry I’ve Been Gone

Hello!  This is my first official week without nannying or teaching group fitness and only working at my retail job,  My goal is still to post 2-3 times a day, and I have been slacking lately!  Not by choice though.  I am still adjusting to my schedule and figuring out when and where I can post.  I just realized today that the mall has free internet, but it is a bit slow and unreliable so I may be heading to Panera during my lunch breaks.

By the time I got everything up and running during lunch today, I realized I forgot my camera in my locker at the store…so lunch went undocumented.  For breakfast though, I sucked down a coffee smoothie as I made my undocumented lunch because I was just too tired to make it last night.  Hopefully I will get a little more used to things throughout the week and be able to get more things accomplished.  I was able to workout this morning though (my favorite time to workout!).  I did a pilates video on Pilatesanytime.com.

There is a weird shadow behind my head...don't know why

Lunch was basically the same as yesterday, so you didn’t miss out on much.  However, I did get a diet coke today because I was sooo tired today at work.  I did go to bed early last night, but not early enough.

I usually do not drink pop (do you say pop or soda??) on a regular basis, but there are times when I have the occasional carbonated diet beverage.  I know that pop isn’t good for you, but I am a strong believer in “everything in moderation.”  Heck!  You can even overdose on water.

Decided to dress it up a bit for work today

 

While at work today, the Jimmy John’s people came to visit us and gave us a ton of mini sandwich samples.  They even had veggie!  After work, I was starving.  Brian picked me up since it was raining and he was starving too, so luckily I had stashed two of the samples in my bag for a little snack to tide us over until dinner.

Once home, I immediately changed into comfy clothes.  The rain just made me feel chilly, and being on my feet all day made me want my slippers 🙂  It felt good to be cozy!

Dinner

Last week, when Sarah and Jeremy took me to Qdoba, I was inspired to recreate one of their queso burritos in a healthier way.  For the queso sauce I adapted a recipe from Hungry-Girl, used brown rice, black beans, roasted summer squash, and whole wheat tortillas.  The result…a delicious and filling burrito!

Queso Burrito–Healthy Style

Ingredients:

  • 3/4 tsp dry taco seasoning mix
  • 3/4 tsp ground cumin
  • 1/3 cup unsweetened original Almond Breeze
  • 2 wedges of Laughing Cow Light Original Swiss Cheese
  • 1 1/2 Tbsp reduced fat cream cheese at room temperature
  • 2/3 cup shredded reduced fat cheddar cheese
  • 1/8 tsp chili powder, or more to taste
  • 2 La Tortilla Factory low carb high fiber tortillas
  • jalepenos
  • 1/2 cup black beans, heated
  • 1/4 cup salsa
  • 1 handful of spinach
  • 1 small yellow summer squash
  • 1/2 cup cooked brown rice (1/4 cup uncooked)
Preparation:
First, cook the brown rice either boiled or in a rice cooker.  Then, preheat the oven to 400º.  When the oven is heated put sliced lightly coated in olive oil summer squash on a pan.  Sprinkle with cumin and garlic salt.  Roast for 10-15 minutes or until tender.
While rice and squash are cooking prepare the sauce:
  • Add almond milk, all three cheese, chili powder, taco powder, and cumin to a pot.  Add 1/4 cup water and bring to medium low heat.
  • Stirring frequently, continue to stir until smooth and sauce-like consistency.
After the queso, rice, and squash are done briefly steam the tortillas.  I put them in the top of my rice cooker!  Seriously, the thing worked like magic.

Then, it is finally time to load up your burrito.  The ingredients were added in this order:  rice, black beans, queso, squash, jalepenos, spinach, and salsa (I took the picture without salsa so you could see everything else).

That's one healthy burrito!

This recipe makes exactly 2 servings with a little extra queso for later.
I do have to say that I am so proud of Brian.  I told him what the menu for dinner was and he said
“can I make some guac??”
“Well of course you can make some guac!”
Because he had learned exactly what to do in order to make guac, he didn’t even ask me a single question.  He simply got to work in the kitchen and the next thing I knew there was tasty guacamole sitting at the table ready to eat.  It was so good I forgot to take a picture…oops.
At least I know that Brian will be able to eat baked chicken and guacamole for the next year without needing my assistance.
Now, I am headed to Fort Wayne because, as the queen of odd jobs, I work there tomorrow.  I am excited to see my mom, and after work we are going to see The Help!  I haven’t read the book, unfortunately, but I am still super pumped 🙂

Good Smoothie Day

Even though you do the same thing to your hair every day, some days just turn out better than others and we have a “good hair day.”  Well, today I made my same coffee smoothie that I have been making for the past few days and today it just turned out way better than usual…it is a “good smoothie day.”

I am glad that the day is off to a good start, because today is actually going to be a pretty busy for me.  After nannying I have to go straight to my new job and work until 10pm!  It is going to be fine, but certain things like not being able to work out and not being able to finish my to-do list tend to make me anxious.

This is something that I have always dealt with, I stress myself out until things get done or work out and then I feel ok about the situation for a little bit until I start stressing myself out again.  Trust me, this is not a fun process, and I have gotten better at dealing with it and realizing that I don’t have to do everything today, but sometimes I just have a little freak out.

I am going into the day already knowing that I can’t work out, which is ok!  I had a great session yesterday, and I will make sure that I have a great session tomorrow.  I am going into the day knowing that this isn’t going to be the day to cross everything off of my list, catch up on e-mails, and get everything in order.  That is probably not going to happen tomorrow either, but if I am able to do one or two things each day it will help me feel a lot less overwhelmed.  Also, if I go into the day with these expectations than I won’t be disappointed at the end of the day when I “didn’t reach my goals.”

Today is going to be a great day, I can just sense it!  I get to see my sister today because she is coming to cut Sarah and Jeremy’s hair while I am nannying…that makes the day great right there!!
