Packing Time

It’s that time again.
Time to pack my bags for a weekend at home in Fort Wayne.  Packing is definitely not on the top of my list when it comes to “things I look forward to doing” no matter how excited I am for the trip.  For some reason, the shorter the trip, the more bags I pack.  I am always worried and stressed that I will forget something.  It’s like I forget that if I forget my toothbrush, there just happens to be a grocery store less than 5 minutes from my parent’s house.

Packing has been slightly easier recently due to the fact that I get ready at the gym every morning.  I just keep all of my “getting ready” stuff in a bag so that when I go to the gym I just grab the bag, which makes it nice to just “grab the bag” while packing for a little trip home.

Breakfast

Breakfast was another smoothie…slightly more attractive than yesterday’s breakfast 😉

A tasty strawberry banana smoothie topped with half of a zucchini breakfast cake for my morning serving of starch, veggies, and a little bit of fat.

Strawberry Banana Protein Smoothie Bowl

  • 1/4 cup frozen strawberries
  • 1/3 frozen banana
  • 1 scoop Sunwarrior protein powder
  • 1/2 cup unsweetened almond milk
  • 4 ice cubes
  • 1 packet stevia
  • 1 tsp vanilla extract
  • a little bit of water to get things movin’!

Workout

I decided to make this my rest day!  Usually I take Sundays as my rest day, but since I am heading home I am going to a Body Pump class tomorrow with mom, and I am planning on heading for a run on Sunday.

Another factor in my decision to take this day of rest was the fact that I don’t have to be at work until 11am today!  Seriously, what a better way to start a Friday?  It is kind of like having an adult snow day.  At work, we have an all company sales meeting from 11am-5pm.  The meeting is located downtown, and my office is located North of downtown.  Because I live South of downtown, my boss was kind enough to realize how much unnecessary extra driving going into work would require, so she told me to just go to the meeting.  I didn’t complain one bit!

So, the morning will include getting ready for my trip home, blog stuff, and a little bit of relaxation!

Feels Like Summer

Yesterday truly felt like the first day of summer.  The weather was gorgeous without a cloud in the sky and enough heat to make summer dresses, sandals, and shorts a necessity.

After spending a few hours at the pool and packing up some more boxes, I headed to the grocery store to get ingredients for dinner and for meals the rest of the week.

When I was younger and living with my parents, in the summer we would LIVE by the pool.  Just basking in the sun all day.  We would then come in from the heat with our cheeks nice and rosie and Mom would have a delicious spread of grilled foods for dinner, almost always with a giant bowl of salad.  I was completely in the mood for one of those meals.

Being in total summer mode, I thought that my homemade black bean burgers, sweet potato fries, and a giant tossed salad would be perfect!

Caitlin was in charge of the salad.  Doesn’t it look beautiful!




The meal was fantastic and the evening was great.  It was a great last gathering at the apartment with good friends.  We just sat around, talked, drank wine and beer…sometimes those are the best nights.

Today

This morning, I actually slept in.  I woke up at about 7:45, and I must admit that when I saw the sun peeking through the windows I thought that I was late.  Luckily, I wasn’t!

In the spirit of summer, a giant bowl of plain Greek yogurt topped with frozen peaches and strawberries, 1/3 of a banana, and half of an apple with a couple of teaspoons of peanut butter to top it off.

It was delicious!

What a tasty way to start the day.

Kitchen Gadgets

Good Monday morning!

This morning’s breakfast was inspired by what I ate while I was cruising around New Zealand, Australia, and Southeast Asia.  Many mornings I would have oats, much like I do now, but another breakfast staple for me was yogurt mixed with cottage cheese topped with fruit.

When eating flavored yogurt (even the light kind), it can sometimes contain a lot of sugar, and while it does contain some protein it could use a little boost in that department as well.  Mixing the yogurt with bit of cottage cheese (this morning I did 3/4 cup of yogurt with 1/2 cup of cottage cheese) gives you more volume without adding in the extra sugar and packs in about 11 grams of additional protein to give this morning meal some extra staying power.

I then topped my yogurt mixture with some chopped strawberries and chopped pair.  It tasted great on the cruise and it tasted great today!

Kitchen Gadgets

Doing all of this cooking at home has had me using my mom’s tools in the kitchen.  My grandma just so happens to be the queen of kitchen gadgets and is always introducing us to new things to use while cooking.

Some of the gadgets she has brought into our kitchen:

Silicone Vegetable Steamer

I used this trinket yesterday, and worked like a charm.  Simply place a small amount of water in the bottom of a pot.  Place your veggies, or whatever you would like to have steamed, into the basket and place the basket into the bottom of the pot.  Cover the entire pot with a lid and turn the burner on to medium high heat.  Allow to steam for about 5-7 minutes or until things are of the desired consistency.

Krupps Egg Cooker

We have had this egg cooker for a while.  It is great for hard boiling eggs because it simply takes out all of the guess work.  All that you have to do is measure out the correct amount of water for the number of eggs you are cooking and turn on the machine.  A buzzer will sound when your eggs are ready.

Garlic Roller Peeler

This little tool is pretty  amazing.  Simply place the clove of garlic with the peel on in the little cylinder.  Press on the cylinder and roll it back and forth applying pressure on the garlic.  After a few rolls, remove the garlic from the cylinder and the peel will be removed without leaving any garlic aroma on your fingers or counter 🙂

Mellita Coffee Maker

Before the single-serve coffee makers came into the scene, my grandparents introduced my family to this little coffee maker.  All that you do is place this little contraption on top of your favorite coffee cup, place a filter inside with a scoop of coffee grounds.  Pour hot water over the grounds, and you instantly have a single cup of coffee.

Tall Skinny Glasses

My grandpa has a pretty tasty recipe for a bloody mary, and one important ingredient is the tall skinny glass.  Of course, my grandparents supplied my mom with the perfect cups for this tasty drink….virgin or alcoholic 😉

Wooden Salad Bowl

In my family, we love having a giant salad with dinner, and much like the bloody marys aren’t the same without the special glasses, the salad just isn’t the same without the giant wooden salad bowl.  It is great for mixing all of the ingredients together because of the large size, but it also looks great when putting it on the table to serve.

Many times, I feel like I see things that look cool but I wouldn’t actually use the item.  I can honestly say that we use all of the gadgets my grandma finds because they are easy to use and extremely practical.  I love seeing the latest gadget my grandma discovers, and I can’t wait to see what she finds next!

St. Patty’s Day Yoga

I love the feeling of waking up in the morning when my eyes just pop right open and I am completely ready to jump out of bed.  This morning was one of those mornings.

It is going to be another beautiful, warm, and sunny day here in Indianapolis and the buds are starting to become leaves on the trees!

When I first arrived in Indianapolis a week ago, the weather was nice but the trees were completely bare.  I think it is so cool that literally in the week I have been here I have been able to see the buds and trees comes to life 🙂

This morning, I was craving some oats so I combined my oats with Sunwarrior protein powder, half of an apple, and just under a cup of strawberries.  The breakfast was satisfying and delicious and will give me the perfect amount of energy for the day.

Yoga

Some of you may know that while I was working on the cruise ship, one of the many classes that I taught was yoga.  Now, I have NEVER been a flexible person and prior to teaching yoga every other day on the cruise ship, I had taken two yoga classes and did a little self study by practicing poses or “asanas.”  You may remember the “Yoga Pose of the Day.

After going through a special training course in London and actually teaching the class, I must say that my flexibility has definitely increased, and I love the feeling I get AFTER a yoga class.  Will I ever be a yoga instructor?  Probably not, but I completely appreciate the practice of yoga and understand the benefits.  So, today, I will be heading over to Lululemon for a complimentary yoga class!

It will feel great to stretch and strengthen my body with yoga this morning.  It has been two weeks since I have completed a class, and I can feel a couple of aches in my body that I know yoga will help.  After my class I plan on going for a little jog so that I can enjoy this perfect day outside!

Great Start to the Weekend

Last night was a hit!  I got to look at pretty jewelry and be with my best friends and mom. 🙂

Checkin' out the goods

I didn’t purchase anything, even though there were amazing deals on just about every item!  I am on a tiiight budget, and I didn’t want to blow it all on one piece of jewelry.  (Thanks for teaching me to be responsible mom!)

Some of the girls got some jewelry though!  Rachel even won $10 off of her purchase, and got two items for half off!  It’s hard to resist those kind of deals.

Everyone raved about the fruit pizza and ate every single piece!  I was pleased to have little leftovers, but Brian was disappointed he didn’t get to try the pizza…maybe next time!

Brian didn’t hang around for the jewelry party, he and some guy friends went to do more manly things like drink beer and hang out at a bar 🙂

After everyone left the party Erin, Caitlin, and I headed to Bourbon Street which is a little bar/restaurant within walking distance of the apartment.  We each grabbed a drink and a snack while our boys were hanging out at the pool…in the rain!

It was a great night, but I was still able to make it to bed by a reasonable hour.  I am thankful for that since I have to fit kids with bicycle helmets today.  I feel like I gotta be 100% pepped up when I am working with those kids!

Breakfast

Today is my day off before I do my long run tomorrow which is 7 miles!  That is officially the farthest I have ever run, and I am excited to challenge myself.   I know that today I need to drink a lot of water and be good to my body 🙂

For breakfast I mixed Chobani plain Greek yogurt with cinnamon and splenda and topped it with the last of the Cranberry Nutty Granola, frozen blueberries, frozen raspberries, and frozen bananas….delish!

Brian and I have a date night planned for the evening at a sushi restaurant in town and I am really looking forward to it!
