Food Girl and Tupperware Man

Happy Hump Day!

I can’t believe that it is already midweek, so far this week is flying!

Yesterday, when I got home from work, I put my millions of bags from the day away, then started right away on dinner.  Since Brian and I both get home around 6pm or later, we are always more than ready for dinner to be on the table as soon as possible.

Last night’s dinner came together quickly, and tasted delicious.

I had about a half of a medium-small sized zucchini that I put through the food processor to make it into noodle-like shapes.  I then steamed the zucchini while I cooked up some Morningstar Farms Meal Starters with some onion and garlic  in a simple tomato sauce.  I topped the zucchini noodles with the “meat” sauce and that was it!  Dinner was served…and consumed immediately.

In order to really allow us to get things done in the most effective way possible, Brian and I both have our “after-work-jobs” mine being Food Girl, and his being Tupperware Man.

My duties include but are not limited to:  preparing dinner, packing lunches, preparing any after dinner snacks that may be consumed, packaging up any leftovers.

Brian’s duties as Tupperware Man include but are not limited to:  emptying out the lunch boxes, cleaning all used tupperware from the day, drying the tupperware so that I can use it to pack the next day’s lunch, cleaning up the dishes after dinner.

So far, it really is a great system, and although I don’t mind cleaning the dishes after I have cooked, it really speeds up the process and allows me to get out of the kitchen and work on other tasks needing to get done before bed.

On the Go Breakfast Biscuits

Yesterday, I raved about my new found morning meal and promised a recipe.  So, here it is as promised 😉

On the Go Breakfast Biscuits (adapted from Busy Girl Healthy Life)

Ingredients

  • 2/3 cup egg whites
  • 1/3 cup egg beaters
  • 1/2 cup fat free or low fat cottage cheese
  • 1 cup lowfat shredded cheddar cheese
  • 1 tsp olive oil
  • 4 Morning Star Farms hot and spicy breakfast “sausage” patties, chopped
  • 1/2 cup white onion
  • 1/2 cup almond meal
  • 1 tsp garlic powder
  • 1/4 tsp crushed red pepper flakes

Directions

Preheat the oven to 375 degrees.  In a large bowl, combine the egg whites, egg beaters, and both cheeses.  Pour olive oil into skillet over medium heat.  Cook the sausage and the onion for about 2 minutes until the onions are tender and the sausage is heated through.

Combine the sausage and onion mixture, the egg mixture, and the remaining ingredients all together.

Spray a mini muffin tin and pour the egg mixture into 20 of the tins.  Place into the oven and bake for 15-20 minutes.

Allow to cool for 10 minutes before removing from the pan.  Enjoy!

*These are great to store in the fridge for quick breakfasts, either hot or cold, and they would probably be good with bacon…or faux bacon 😉

A Whole Lot of Nothing

Tonight, I feel like I have done a whole lot….of nothing.  After lunch, I took the puppies on a walk.  It is hard to get them to pose for a picture because I feel like they are ALWAYS moving, at least when I try to take pictures of them.

Finally a decent one 🙂 They were playing with each other.

I then went to the apartment to meet Brian for dinner.  I quickly steamed some asparagus…and I must say it was perfectly steamed. Slightly crunchy and full of flavor!  The asparagus was served along side a Morningstar Farms Black Bean Burger.  Simple, quick, and tasty.

I then backed up my computer on my external hard drive because my power adapter has been giving me troubles.  My computer is about 5 years old, so I guess some problems are expected at this point.

The cord is beginning to come apart, so I taped it together until my new one comes in the mail…which should be soon.

While my computer was backing up, I decided to take advantage of the weather and go on a little 40 minute jog.  The weather is seriously perfect!  The only downfall…it is a little windy, which makes it hard when you are running against it, but it was still a great run.  There were so many people out and about, and that is what I love to see.

 

I then packed up my computer and headed back to the puppies, I played around with them for a bit, and the next thing I knew it was just about 9pm!  Where did the day go?  I feel like I didn’t stop the whole day…yet the to-do list is not done.  That’s what tomorrow is for, I guess!

 

This is so random, but about a year ago, I participated in a survey for people with contacts.  Well, they sent me a follow-up survey today and for completing it, I got a $25 gift card!! How awesome is that?  I love free stuff 😉
