Torch Cupcakes and a Cafe Misto

Last night, after being extremely tired and getting home kind of late due to an evening Body Pump class…I remembered that I had committed myself to make cupcake torches for an evening reception at one of the hotels that I work at.  The reception is Olympic themed…and me being the theme-lover that I am thought it would be a GREAT idea to make these cute cupcake torches that I saw on Pinterest…

They look a lot better than I thought they were going to turn out.

 

They are just cupcakes made in ice cream cones and topped with orange and yellow swirled icing.

 

The difficult part…transporting them.  I finally got them in the box, but now I am worried about getting them out for the event tonight!

 

They look good, although I was tired and not really in the mood to frost a ton of cupcakes last night.  The process, however, was a tad bit messy…

 

All in a day’s work!

Breakfast

Last night I prepped a bowl of overnight oats with some raw cacao (chocolate) action along with almond butter.  I recently made a batch of chocolate almond butter that tasted just like brownie batter…that is the flavor I was going for this morning.  It didn’t quite taste like brownie batter…but they did taste pretty darn good!

 

I then taught my usual Tuesday morning spin class, and got ready super fast afterward so that I could head to Starbucks and publish this post!

I decided to treat myself with a tall Cafe Misto with a side of banana bread sample.  The misto was a great decision, the banana bread was good…but mine is better 😉

This was my first time trying a Cafe Misto, and I am so glad that I did.  They are a great swap for a latte because they are about $0.50 cheaper and have slightly less calories.  I got mine plain, but you can add a syrup pump if plain is too boring for you.

 

Now, I’m off to work!

Friday Ants in my Pants

It’s Friday the 13th!

Any spooky plans on the agenda today??  None for me, however, my day is off to a great start, and I just know that it is going to continue to be great.

 

Breakfast

I started out the morning with a delicious and creamy bowl of overnight oats topped with some blueberries and peanut butter.  Yum in the tum.

Workout

I then completed a super sweaty, intense, high intensity elliptical circuit that completely beats the boredom that can occur while using a cardio machine…trust me, I’ve been there.

And now, I am headed  to work….with the Friday ants in my pants.  I swear that it is almost impossible to sit still and focus for me on Fridays…don’t tell my boss that!!  I am so excited for AFTER work, because I have a special surprise date night planned for Brian and I.  He has no idea what I have up my sleeves!! 🙂

It Tasted Like French Toast!

Good Morning!

A short week is always a good week in my book.  So, although it feels like Monday today, it is in fact TUESDAY.

Tuesdays are when I teach my 6am spinning class, and although I am a morning person and don’t have trouble getting out of bed before the sun, sometimes I have to do a little self pep talk in order to make sure that I am cheery and peppy for my class.

For whatever reason, driving makes me extremely tired, add to that a lack of sun, a warm sweat shirt, lack of caffeine, and on days like today rain….and by the time I get to the gym I am ready for a snooze!  On days like today, I have to just sit in the car for a couple of minutes, mentally prepare, then enter the gym and say hi to everyone.  Seriously, I don’t know if it is the act of smiling or talking or both, but that is what gets me going!

Workout

After teaching spin, I always like to do a 30 minute strength workout, and today I focused on shoulders.

This workout left my shoulders fatigued.  Each week, I try to increase my weights by just a little bit so that I can keep that burn coming after each workout.

Breakfast

Breakfast this morning was a bit of an experiment.  One of my friends who has similar interests in nutrition and exercising as me told me that she often cooks her oatmeal in the morning with egg whites for an added boost of protein rather than using protein powder.  I thought about trying it, but never actually got around to it…until this morning.

Boy, was that a great decision!  The oats tasted like french toast to me because of the slightly eggy flavor.  I will definitely be doing this again 😉

Egg White Oats

Ingredients:

  • 1/2 cup oats
  • 1/2 cup water
  • 2 egg whites
  • 1 packet stevia
  • a sprinkle of cinnamon
  • 1 tsp of vanilla extract

Directions:

Combine all ingredients together in a microwave safe bowl.  Microwave on high for 1 minute.  Remove from the microwave and stir, then cook for 1 more minute.  Once you are ready to eat, you can eat them as they are or top with your favorite toppings.

Today’s toppings: frozen peaches, and 1 Tbsp of crunchy peanut butter…delish!

*2 egg whites adds in about 8 grams of protein with only around 32 additional calories!!

Yesterday after teaching my spinning class, I decided that a little shoulder workout was what I needed.  Summer is getting near meaning it is time to expose our arms, and I have always thought that if a woman has toned shoulders it automatically makes the rest of her arms look great!

Shoulders are not my strongest muscle group, but it is one of my favorite muscle groups to workout.  Maybe it is because I reach the fatigue stage so easily!

This workout took me about 20-25 minutes to complete, so it would be a great addition to your regular cardio routine.

Breakfast

This morning I started out with more PB2 Chocolate in my overnight oats.

I swear, I am addicted to this PB2 stuff! I should have ordered more than one.  Now, I am off to volunteer at the Indianapolis Symphony Orchestra, fit in a 3.5 mile run, and sing in the church choir.  Sounds like a great day to me!

Bosu Discovery

Lately, I have been trying a lot of new-to-me group fitness classes at one of the gyms I am teaching at.  I like meeting the different instructors, seeing different teaching styles, and trying new workout routines.  Today, I tried a class called Bosu Discovery. In the class we warmed up balance exercises, exercises stepping onto the bosu and jumping onto the bosu, as well as a little core work.  I love working with the bosu ball because you are constantly working your core (abs and back) to maintain your balance no matter what exercise you are performing.

 

Here are some of my favorite bosu ball exercises:

Ab In and Out:  Balance your bottom on the ball.  Pull your belly button into your spine, engaging your abdominal muscles.  Rest your hands on the back of the ball and extend your legs as you lean back to a 45 degree angle.  Bring your knees back into your chest (starting position) for one rep.  To advance this move, simply hold a weight between your feet.

Squats:  Flip the bosu upside down and stand on the flat side.  Engage your abs to find your balance.  Squat down as low as you can while keeping your heels on the bosu.  Try to get your butt down to your heels.  This one really challenges your balance and will have your legs shaking!  Hold onto one dumbbell in each hand to add a little extra resistance.

Russian Twist:  Find your balance by siting your bottom directly in the center of the ball.  Tilt your upper body back to a 45 degree angle.  Either using just your hands holding onto a weight, rotate your upper body side to side while keeping your belly button pulled into your spine.  You can lift your feet off the ground to make the exercise a little more difficult.  Keep your feet on the ground if you are having trouble keeping good form.

I love these exercises because they seem so simple, but adding in the bosu will really get your muscles shaking with fatigue!  At least mine do 😉

Breakfast

I then came home and it was breakfast time!  A couple of days ago, I made myself a bowl of baked oatmeal or “boatmeal” and instantly I fell in love.  I immediately want to try several different flavor variations and get creative in the kitchen.  Yesterday, my sister’s leftover Easter apple nachos were looking a little sad, so I decided to chop them up and make mini apple cinnamon baked oatmeal.  The result was delicious hot or cold, and great for a breakfast that needs to be eaten on the run. Baking the oatmeal in little muffin pan liners makes them easy to take with you to eat at the office or in the car.

Apple Cinnamon Baked Oatmeal Bites

Ingredients:

  • 2 cups of oats
  • 1/2 cup of applesauce
  • 1 scoop of protein powder (I use pea protein)
  • 3 packets of stevia
  • 1 cup of chopped apples
  • 1 tsp cinnamon
  • 2 cups water (can use milk if desired)

Directions:

Preheat oven to 400 degrees.  Combine all ingredients in a medium sized bowl until thoroughly combined.  Divide the batter into 8 lined muffin tins.  Bake for 15 minutes.  After 15 minutes, turn the oven onto broil and bake for another 3 minutes to brown the tops.  Remove from the oven and allow to cool for 5 minutes.  If you want to eat them hot…enjoy right away!  If you want to save them for later, package in a sealed container and store in the fridge.

2 bites equals 1 serving.

Calories:  104.2  Fat:  1.4g  Carbs:  30g  Protein:  5.6g

St. Patty’s Day Yoga

I love the feeling of waking up in the morning when my eyes just pop right open and I am completely ready to jump out of bed.  This morning was one of those mornings.

It is going to be another beautiful, warm, and sunny day here in Indianapolis and the buds are starting to become leaves on the trees!

When I first arrived in Indianapolis a week ago, the weather was nice but the trees were completely bare.  I think it is so cool that literally in the week I have been here I have been able to see the buds and trees comes to life 🙂

This morning, I was craving some oats so I combined my oats with Sunwarrior protein powder, half of an apple, and just under a cup of strawberries.  The breakfast was satisfying and delicious and will give me the perfect amount of energy for the day.

Yoga

Some of you may know that while I was working on the cruise ship, one of the many classes that I taught was yoga.  Now, I have NEVER been a flexible person and prior to teaching yoga every other day on the cruise ship, I had taken two yoga classes and did a little self study by practicing poses or “asanas.”  You may remember the “Yoga Pose of the Day.

After going through a special training course in London and actually teaching the class, I must say that my flexibility has definitely increased, and I love the feeling I get AFTER a yoga class.  Will I ever be a yoga instructor?  Probably not, but I completely appreciate the practice of yoga and understand the benefits.  So, today, I will be heading over to Lululemon for a complimentary yoga class!

It will feel great to stretch and strengthen my body with yoga this morning.  It has been two weeks since I have completed a class, and I can feel a couple of aches in my body that I know yoga will help.  After my class I plan on going for a little jog so that I can enjoy this perfect day outside!

Crazy Schedule

Hello!

Yesterday was very successful!  I was able to unpack everything I needed, organize my clothing making room for all of the new goodies from Brian’s mom, clean up and organize our closet, and organize the bathroom closet.

After all of the cleaning and organizing, I needed a break, so Brian, our friend Caitlin, and I headed outside to the perfectly sunny and slightly windy weather for a little boot camp workout lead by yours truly!

We did a small circuit with a minute of each exercise three times:

  • Bench step ups
  • Knee to chest plank
  • Tricep dips

We then ran 3 miles together, and then I ran another 3 by myself!  The workout was fun because we were outdoors and in good company 🙂  That always makes a good workout go by fast.

We then showered up, ate some random food because there wasn’t anything to really make a meal and then headed to the grocery store.  We weren’t done at the store until 10pm…it was 7:30pm when we headed to the store, which gave us a late start to begin with so we were very tired by the end.  Going to the grocery store after being gone for a while is always the most expensive trip ever!  So, even though I spent more than planned, I was able to stock up on some essential items that we were lacking in the cupboards.

Today

This morning, I started out bright (or should I say dark) and early with the Insanity Max Interval Sport video.  I had done the insanity workouts at the beginning of last summer and honestly got a little bored with the program, but because I don’t have a gym membership yet and I am not teaching group fitness yet, the workout did the body some good.  I then followed the workout with a little bit of ab work:

  • 50 crunches
  • 50 clam crunches
  • 50 toe touches (to the ground to target lower abs)
  • 50 bicycle crunches
  • 50 oblique crunches
  • 10 oblique reach throughs on each side

It was great to get back on track and start the day with a major sweat session.  Today, I have a couple of meetings, but the big thing on the agenda is organizing the kitchen!  That will feel good to get done 😉

I then had a delicious breakfast of oatmeal, berries, Sunwarrior, and Krema peanut butter.

While there is always a time and place for the traditional Skippy or Jif peanut butter, to me, there is nothing that beats the peanutty taste of Krema peanut butter…and what are the ingredients??? Peanuts!  That is it, and I think that is my favorite thing about this kind of peanut butter, no added oils, salts or sugar because they are sooo not needed.  If you haven’t tried this kind of PB, then you do not know what you are missing 😉

 

I am trying so hard to get on a schedule that is somewhat normal, but right now I feel it is almost impossible to do so!  Things just keep popping up and the next thing I know it is 10pm!! Somehow I will get this whole schedule thing figured out.
