Torch Cupcakes and a Cafe Misto

Last night, after being extremely tired and getting home kind of late due to an evening Body Pump class…I remembered that I had committed myself to make cupcake torches for an evening reception at one of the hotels that I work at.  The reception is Olympic themed…and me being the theme-lover that I am thought it would be a GREAT idea to make these cute cupcake torches that I saw on Pinterest…

They look a lot better than I thought they were going to turn out.


They are just cupcakes made in ice cream cones and topped with orange and yellow swirled icing.


The difficult part…transporting them.  I finally got them in the box, but now I am worried about getting them out for the event tonight!


They look good, although I was tired and not really in the mood to frost a ton of cupcakes last night.  The process, however, was a tad bit messy…


All in a day’s work!


Last night I prepped a bowl of overnight oats with some raw cacao (chocolate) action along with almond butter.  I recently made a batch of chocolate almond butter that tasted just like brownie batter…that is the flavor I was going for this morning.  It didn’t quite taste like brownie batter…but they did taste pretty darn good!


I then taught my usual Tuesday morning spin class, and got ready super fast afterward so that I could head to Starbucks and publish this post!

I decided to treat myself with a tall Cafe Misto with a side of banana bread sample.  The misto was a great decision, the banana bread was good…but mine is better 😉

This was my first time trying a Cafe Misto, and I am so glad that I did.  They are a great swap for a latte because they are about $0.50 cheaper and have slightly less calories.  I got mine plain, but you can add a syrup pump if plain is too boring for you.


Now, I’m off to work!

I’m Employed!

Today has been a whirlwind of a day!!!

First, let’s back track to last night to take a look at this little gem.

Brian and I decided we were in the mood for a little treat, so we went to Yogulatte.  We decided to share, but I got the lucky job of filling the cup and sampling all the flavors.  In our bowl I went for the peanut butter fro yo, cheesecake fro yo, and pistachio, topped with granola, some almonds, peanuts, and a little peanut butter…do you think I was craving some peanut butter? 😉 It certainly hit the spot.


This morning, I woke up bright and early to hit my long run for the week.  8 was on the schedule, but I had a very important meeting to attend, so I had to cut it short at 6.  It still felt great though!  It was so nice to get it done and over with before 7:30am.

I then quickly got ready and headed to my important meeting, which just happened to be a job interview.  I had a feeling that things went pretty well, so I stopped at Starbucks to treat myself to a mocha light frappuccino.  Yummm.

I then came home, talked with Brian and my parents about the interview, started making my grocery list when my phone rang….


I am now officially an employed college graduate, and I am very excited about it 🙂


Even though I was so excited, Brian and I still had zero food in the pantry…so to the grocery I went.

And because my eating schedule was all wacked out today, I ate a super early, but delicious dinner.  I made myself a salad with lettuce, tuna, broccoli, tomato, cucumber, bell pepper, and reduced fat feta cheese.  I know you can’t see all of that goodness in there…but believe me, it is in there.


Now, I am off to teach a Friday evening spinning class!

Meeting the Photographer

Tonight, Brian and I had plans to meet with a potential photographer.  Before heading out, we enjoyed a quick meal of Caesar Salad topped with salmon.  Seriously one of my favorite meals.

We met her at a Starbucks, and I have been verrrry snacky today (I had several handfuls of raisins after dinner…) so of course I wanted to try the new salted carmel mocha light frappucino…that’s right LIGHT!  I love when the new flavors come in the light version.  Sweet and salty has always been one of my favorite flavor combos so this drink was right up my alley.  Brian, however, didn’t think that it was his cup of…frappucino 😦

Before meeting with the photographer, Brian and I thought that we should probably do a little research about what questions to ask when meeting with a potential wedding photographer for the first time…so we both did a little Google search to see what we could come up with. was a great resource as usual!

Here are the questions that we decided were important to us:

  1. What is your backup plan in case of an emergency such as a broken camera, family emergency, etc.?
  2. Do you have a second photographer?
  3. Can we have all of the photos above and beyond the minimum amount?
  4. What do you mean when you say you have a “photojournalist” style?
Another good tip was to look for a good mixture of portraits, candids, details, and scenic photos within the photographer’s portfolio.  And the last tip was to check out how well the photographer’s personality meshes with your own, because they are going to be spending a lot of time with you on one of the most important days of your lives, and they are going to be getting a little bit up close and personal.
The great part about our meeting was that she answered literally all of our questions before we even had to ask them!  I think we may have found a match…but we don’t want to jump the gun so we still have a little discussing to do.
I am headed to an early morning Body Pump session tomorrow, so I am out for the night!  Sleep tight!
