Refrigerator Iced Coffee

Good morning!

I really enjoyed my overnight oats in a jar yesterday, so much that I craved it again this morning…luckily I had another jar of peanut butter with only the last little bits left on the bottom.  I topped the overnight oats with some delicious fresh strawberries.  Perfect fuel for my 6am spin class!

Last Night

Last night, I actually got done practicing Body Pump, packing my meals, and getting ready for today earlier than expected so I had some time to work on Brian and I’s budget.  We have been trying a new-to-us system…the envelope method, and last night I finally got around to making the envelopes.

These envelopes will be filled with an alotted amount of cash for the month for us to spend on various areas of our life (grocery, car, fitness, fun, wedding, etc) and when then cash is gone…it’s GONE!  I am excited to see how it will work for Brian and me.

Iced Coffee

With the hot hot weather here in Indiana, I have been LOVING the little treat of iced coffee.  It can get kind of pricey to always head out to a coffee shop when the craving strikes, so I figured out a way to make it at home.  Seriously, I think it tastes better than the coffee shop!


The Iced Coffee Method:

When you brew a pot of coffee, put the extra (or the whole pot) in a large glass or jar in the fridge at least for a couple of hours if not overnight.

When you are ready to make the coffee, fill up a large glass with ice to the brim and pour the cold coffee over the top.

I like to use almond milk, my mom likes to use coffee creamer…either works and tastes delicious!  I mix 1/4 cup almond milk with 1 packet of stevia and a little vanilla extract.  I then pour that into the iced coffee.

Stir to combine, and ENJOY!!

Next Stop…London

I made it to the Philadelphia International Airport on an uneventful plane ride.  I found a smoothie place that looked pretty appetizing, and got a strawberry smoothie to curb my hunger.  The flight to London says that a meal is included, but the flight isn’t until 9:50pm…which is really late for dinner.

Now, I’m off to set up camp while waiting for my flight and read some blogs 🙂

 

It’s Finally Here!

Good Morning!

I have exciting news!!  The Winter 2011 Vera Bradley Catalog is available online.  You are probably wondering why this is such great news.

Well, about 5 months ago, a sorority sister sent an e-mail over our list serv that Vera Bradley was accepting applications for models for the winter catalog.  I always apply for random performance opportunities and things of that nature, and me being from Fort Wayne (where Vera Bradley was founded and is located) got me really excited about this possibility.  I applied stating my relationship with the company as being a friend of one of the marketing copy-writers.  We were in Beauty and the Beast a few years ago in Fort Wayne’s community theater, so I sent him a brief e-mail to let him know that I was using him as my reference.

I hadn’t heard anything for a while so I just assumed that they had millions of applications and wasn’t surprised that I didn’t get picked until….I got an e-mail saying they were very excited to use me in the catalog!

Brian and I headed up to Chicago for the day to shoot on Navy Pier.  We arrived early so we were able to watch other girls have their photos taken, talk with the girls in charge of the shoot, and really soak up this amazing experience.  Everyone was just wonderful to work with, and I hope that I am able to stay connected 🙂

That pose was harder than you think, they literally would count to three and I would flale (is that a word?) my legs up and out while smiling, holding the bag in a good viewing position, without spreading my legs too far.  Honestly, it was a lot more tiring than I expected!  I wouldn’t trade it for the world.

 

Breakfast

Moving on to the usual.

I started off with a chocolate covered strawberry smoothie.

Later this morning I am off to Body Pump…again (I think I’m addicted!) and I will show you a yoga pose!

Camel and Pump

Yoga Pose of the Day is back!  Today’s pose is Camel.

The physical benefits of Camel are that it stretches the thighs, torso, chest shoulders, and throat, strengthens the legs, pelvis, and lower back region, opens the hips and hip flexors, aids digestion, stimulates circulation, increases spinal flexibility, and improves posture.

After teaching Cycle Core yesterday, I thought that a good hip flexor and ab stretch would be the perfect start to the day.

Breakfast

For breakfast, I originally wanted to use up the rest of the raspberries that my mom brought over from the Amish farmer’s market on Friday… but they were bad :(.  Instead I made the same smoothie as I did on Monday with strawberries.

Workout

Later this morning I am going to try my first Body Pump class.  I first heard of this class by reading about it on other blogs, and then I realized that I knew someone who used to teach it!  I have been wanting to try this upbeat, intense, strength training class for quite sometime now so I will be sure to let you know how it goes 🙂

It’s a Lia Sophia Party!

Because I am having a group of friends over this evening for a Lia Sophia party, I spent a good portion of the morning cleaning up the apartment.  We have white cabinets in our kitchen that were looking a little bit dingy, so Brian went out and got a Mr. Clean Magic Eraser.  Seriously, those things are magic!  It got rid of all the stains in no time!

Mom is coming down for the party tonight, and since she had a bit of a rough day Brian and I got her some sunflowers…to me these flowers just exude happiness 🙂

After cleaning the apartment and getting things ready for tonight we headed down to the pool.  I brought some reading materials.  Bridal Magazines:

We were only out there for a couple of hours but we both got more sun than expected!

I contemplated forever and ever what I wanted to serve my guests tonight.  First, I couldn’t decide between sweet and savory.  I finally decided on sweet.  Then, I couldn’t decide on how many things to make…I easily could have done 10!  I finally decided on three items.  Here two of the recipes for the treats that I made:

Raspberry Cream Cheese Brownies

Ingredients for Brownie:

  • 2 sticks of margarine
  • 1 cup cocoa powder
  • 1 cup sugar
  • 1 10 oz jar of raspberry preserves
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 1/4 cups flour
  • 1/4 tsp baking soda
Ingredients for Swirl Topping:
  • 8 oz of light cream cheese
  • 1/3 cup sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1 cup raspberries
  • 1/2 cup sliced almonds (optional)
Preparation:
Preheat oven to 325 degrees.  Spray 9×13 inch dish with cooking spray.
In a 2-3 qt. saucepan, melt the margarine over medium heat.  Whisk in cocoa until bubbling.  Remove from heat, whisk in sugar and preserves.  Mix in the egg and vanilla.
In a small bowl, stir together flour and soda, then add to chocolate mixture.  Pour into baking dish.  Mix together swirl topping, folding in the berries.  Spoon large dollops of cream cheese onto brownie batter, swirl with knife.  Sprinkle with almonds if using.  Bake 30-35 minutes (the centers tend to stay pretty goopy). Cool completely, cut into 24 squares.
Individual Fruit Pizzas (Inspired by How Sweet Eats)
Cookie Ingredients (from How Sweet Eats)
  • 2 cups + 2 tablespoons all-purpose flour
  • 1/2 tsp baking soda
  • 12 Tbs margarine, melted and cooled
  • 1/2 cup sugar
  • 1 egg and 1 egg yolk
  • 2 tsp vanilla
  • 8 oz whipped cream cheese
  • 1 tsp vanilla
  • 2 Tbsp brown sugar
  • Fruit of your choice (I chose blueberries, mango, banana, and strawberries!)

Preheat oven to 325 degrees F.

Mix the flour and baking soda in a bowl and set aside. In another bowl, mix the margarine and sugars until they are combined. Add the egg, egg yolk, and vanilla and stir until mixed. Gradually add flour and mix until a dough forms – it will look crumbly at first, but it will come together. I even used my hands to help at one point.

Place small tablespoonfuls of dough onto an ungreased baking sheet.

Bake for 12-15 minutes (large cookies) or 8-12 minutes (small cookies) or until the edges are slightly brown. The centers should be soft and puffy. Do not over bake.

Whip together cream cheese, brown sugar, and tsp of vanilla.

Top each cookie with mixture.

Then chop up your fruit and add it on top!

Lazy Morning

What do I love about a day without work or anything scheduled?

Sleeping until my body naturally wakes up…7am this morning…woo!

Eating breakfast in my PJs before my daily workout

Today’s breakfast:  Strawberry Banana Smoothie Bowl topped with raw oats

  • 1/2 banana
  • 1/2 cup strawberries
  • 1/2 cup almond milke
  • pinch of xanthum gum
  • handful of spinach
  • splash of vanilla
  • 2 packets of splenda
  • water and ice for volume
I also love being able to watch the Today Show in the morning.  I haven’t been able to watch it since Ann Curry took over for Meredith, but so far this morning she is doing great!
Because of the heatwave all over the country, they tried to cook an egg, pizza, macaroni and cheese, and cookies on the side walk yesterday…and it worked!  Crazy
I also love not having to shower until later in the day…is that strange?  I just feel like it’s a summer thing for some reason!

  • 1/2 Packet of Diet Swiss Miss Cocoa
  • 1 Handful of Spinach
  • 1/2 Cup Almond Milk
  • Pinch of Xanthum Gum
  • 2 Packets of Splenda

Since I was all dressed up for the wedding, I thought that it just wouldn’t be right if I drank it out of an ordinary cup…so I used a glass that makes me happy every time I use it!
