Because I am having a group of friends over this evening for a Lia Sophia party, I spent a good portion of the morning cleaning up the apartment. We have white cabinets in our kitchen that were looking a little bit dingy, so Brian went out and got a Mr. Clean Magic Eraser. Seriously, those things are magic! It got rid of all the stains in no time!
Mom is coming down for the party tonight, and since she had a bit of a rough day Brian and I got her some sunflowers…to me these flowers just exude happiness 🙂
After cleaning the apartment and getting things ready for tonight we headed down to the pool. I brought some reading materials. Bridal Magazines:

We were only out there for a couple of hours but we both got more sun than expected!
I contemplated forever and ever what I wanted to serve my guests tonight. First, I couldn’t decide between sweet and savory. I finally decided on sweet. Then, I couldn’t decide on how many things to make…I easily could have done 10! I finally decided on three items. Here two of the recipes for the treats that I made:
Raspberry Cream Cheese Brownies
Ingredients for Brownie:
- 2 sticks of margarine
- 1 cup cocoa powder
- 1 cup sugar
- 1 10 oz jar of raspberry preserves
- 4 eggs
- 1 tsp vanilla extract
- 1 1/4 cups flour
- 1/4 tsp baking soda
- 8 oz of light cream cheese
- 1/3 cup sugar
- 1 egg
- 1/2 tsp vanilla
- 1 cup raspberries
- 1/2 cup sliced almonds (optional)
- 2 cups + 2 tablespoons all-purpose flour
- 1/2 tsp baking soda
- 12 Tbs margarine, melted and cooled
- 1/2 cup sugar
- 1 egg and 1 egg yolk
- 2 tsp vanilla
- 8 oz whipped cream cheese
- 1 tsp vanilla
- 2 Tbsp brown sugar
- Fruit of your choice (I chose blueberries, mango, banana, and strawberries!)
Preheat oven to 325 degrees F.
Mix the flour and baking soda in a bowl and set aside. In another bowl, mix the margarine and sugars until they are combined. Add the egg, egg yolk, and vanilla and stir until mixed. Gradually add flour and mix until a dough forms – it will look crumbly at first, but it will come together. I even used my hands to help at one point.
Place small tablespoonfuls of dough onto an ungreased baking sheet.
Bake for 12-15 minutes (large cookies) or 8-12 minutes (small cookies) or until the edges are slightly brown. The centers should be soft and puffy. Do not over bake.
Whip together cream cheese, brown sugar, and tsp of vanilla.
Then chop up your fruit and add it on top!
